Three days: west, summit and south
Use one day for Caldera viewpoints or a suitable hike, one for Roque de los Muchachos when access and weather allow, and one for Fuencaliente and the volcanic south. Base location may make a Santa Cruz day more logical than one of these.
Five days: add forest and towns
Add Los Tilos or another verified north-east route and a slower Santa Cruz, Los Llanos or Tazacorte day. Do not combine distant trailheads just because the island looks small.
Seven days: protect weather-sensitive plans
Add stargazing, a beach or natural-pool day and one flexible slot. Move high-altitude or exposed walks to the best forecast and check official access before departure.
