El Hierro's cheese — goat, cow or sheep, often blended — appears at every meal: grilled with mojo, melted into caldo de queso, or crumbled over something the chef is proud of. It is the island's workhorse ingredient, and the fresh versions from the farm shops taste like the pasture they came from.
Quesadilla herreña: the sweet that confuses
Quesadilla herreña is the island's signature dessert: fresh cheese, eggs, sugar, anise, lemon and cinnamon, baked into a dense sweet cake that says nothing like its name. It appears in bakeries, restaurants and every goodbye basket, and no trip to Hierro should end without it — with coffee, preferably, and seconds justified.
Fish, limpets and El Golfo's fruit
La Restinga's fishermen work the Mar de las Calmas, and their catch — fresh fish grilled whole, limpets, octopus — is the island's finest table. Papas arrugadas with mojo travel alongside, goat and rabbit appear in the interior, and El Golfo's tropical fruit (pineapple among it) finishes the picture of a volcanic larder.
Wine and the resident's table rules
El Hierro's DO wines, whites especially, grow in tiny volcanic plots and deserve a proper tasting — with a designated driver, because the roads earn the caution.
